Catering appliances consume air and produce combustion products in a confined, busy space. Adequate ventilation, both extract and the replacement air to feed it, is what makes that safe. Extract alone is not enough: pull air out without letting it back in and the kitchen goes into depression, which affects how every appliance burns.

Interlocks and why they trip

Why does my gas interlock keep shutting the supply off?

Usually because the ventilation is not performing as it should, which is the interlock doing its job. Look at fan performance, filters and replacement air rather than treating the interlock itself as the fault.

Do I need anything done if I only change one appliance?

Yes. A new or moved appliance changes the demand on the ventilation and the installation it was assessed against, so it should be reassessed even where no pipework has been altered.

Is extract ventilation on its own enough?
